Ingredients (4 servings)
- 300 g salmon (Scottish)
- 100 g coarse salt
- Handful mustard seeds
- 300 g sushi rice
- (cream, fish sauce, 2 limes, mirin, sushi vinegar)
- 1 little black radish
- 20 mini asparagus (Thailand)
- soja sause
- Thai basilicum
- 1 sheet of seaweed or NORI (from the traditional sushi)
- rice paper (like rice kroepoek)
- sesame seed (black)
Preparation
Salmon marinade
Cover the salmon with the salt and mustard seeds for 24 hours and rinse thoroughly afterwards.
Rice
Cook the rice careful en cutter with the cream. Flavor with fish sauce, lime, mirin en sushi vinegar)
Nori(sushi) and rice paper
Create equal strips from the nori and fried them for a few seconds. Do the same with the rice paper, so you get something like rice kroepoek.
Black Radish
Create beautiful circles from the radish and marinade the radish in 400 g water, 100 sugar and 100g vinegar with some mustard seeds for 1 day
Finish
